Butter Pecan Blondies serves: 12-16

Prep time: 10 minutes

Cook time: 25 minutes

Total time: 35 minutes

You will need

• 8 tbsp/113g unsalted butter, browned

• 1 cup/200g dark brown sugar

• 1 large egg

• 1 egg yolk

• 1 tsp/5ml vanilla extract

• 1 1/4 cups/150g all-purpose flour

• 1/4 tsp/1g baking powder

• 1/2 tsp/3g salt

• 1 cup/120g chopped pecans, toasted

1. Grease or line an 8” x 8”/20cm x 20cm baking pan with parchment paper. Preheat the oven to 350°F/175°C.

2. Melt the butter in a heavy bottomed saucepan over medium heat, swirling occasionally until dark brown and nutty. Once browned, set aside to cool slightly.

3. In a large bowl, combine the brown sugar with the whole egg and one additional egg yolk.

Use a hand mixer to whip on medium speed until the eggs are pale and creamy and form ribbons when the beaters are dragged through the mixture.

4. On low speed, beat in the melted butter and vanilla extract.

5. Fold in the flour, baking powder, and salt until smooth.

6. Fold in the toasted pecans.

7. Scrape into the prepared pan and level out, pushing into the corners.

8. Bake for 25-27 minutes until golden on the edges and set in the center.

9. Allow to cool completely before slicing into 12-16 pieces.
