You will need
• 1 cup/227g unsalted butter, softened
• 1 1/3 cups/270g granulated sugar
• 1 large egg
• 1 egg yolk
• 2 tsp/10ml vanilla extract
• 2 3/4 cups/330g all-purpose flour
• 1 tsp/5g baking soda
• 2 tsp/7g cream of tartar
• 1/2 tsp/3g salt
• 1/2 tsp/1g ground cinnamon
For the topping
• 1/4 cup/50g granulated sugar
• 2 tsp/4g ground cinnamon
1. Grease or line a 9” x 13”/23cm x 33cm baking pan with parchment paper. Preheat oven to 375°F/190°C.
2. In a large bowl, whip the softened butter with a hand mixer or stand mixer on medium speed until fluffy.
3. Add the sugar and beat on high speed until just combined.
4. Add the egg, egg yolk, and vanilla. Beat on high speed until smooth and fluffy.
5. Add the flour, baking soda, cream of tartar, salt, and 1/2 tsp/1g cinnamon. Beat on low speed until just combined.
6. Scrape into the prepared pan and level out.
As the batter is very thick, it is easiest to add it to the pan in clumps and spread to connect them and fill the corners.
7. In a small bowl, combine 1/4 cup/50g granulated sugar and 2 tsp/4g ground cinnamon for the topping.
8. Sprinkle the topping in an even layer over the batter, completely covering it.
9. Bake for 17–22 minutes until golden on the edges and set in the center.
10. Allow to cool completely before slicing into 20–24 pieces.
Tips and tricks!
• The batter is very thick, so add it to the pan in clumps and spread the clumps together to fill the corners.
• Allow the bars to cool completely before slicing.
Variations: Swap the cinnamon for pumpkin pie spice blend for a different flavour.
