Vegan Apple Crumb Muffins serves: 12

Prep time: 15 minutes

Cook time: 20 minutes

Total time: 35 minutes

You will need

• 1 medium/135g apple, chopped

• 2/3 cup/135g light brown sugar

• ½ cup/120ml neutral oil

• ½ cup/115g unsweetened apple sauce

• 1/2 cup/120ml non-dairy milk

• 1 tsp/5ml vanilla extract

• 2 ¼ cups/270g all-purpose flour

• 1 tsp/2g cinnamon

• ½ tsp/1g ground nutmeg

• ½ tsp/3g salt

• 1 tbsp/12g baking powder

• ¼ cup/50g light brown sugar

• 6 tbsp/45g all-purpose flour

• ½ tsp/1g cinnamon

• 2 tbsp/30ml neutral oil

• 2 tsp/10ml water

1. Preheat the oven to 375°F/190°C. Grease the wells of a ½ cup/120ml muffin tin or line with paper liners.

2. Chop the apple into 1/2”/12mm chunks. Peeling is optional.

3. Make the batter. In a large bowl, combine the brown sugar, oil, and apple sauce.

Whisk until well emulsified.

4. Whisk in the non-dairy milk and vanilla.

5. Add the flour, baking powder, salt, and spices.

Fold in until just mixed; it does not have to be smooth.

6. Fold in most of the apple chunks until just mixed. You can reserve a few to place on top. Set aside to let the flour hydrate.

7. Make the streusel. In a small bowl, combine the brown sugar, flour, and cinnamon. Stir to combine.

8. Add the water and oil and stir or crumble with your fingertips into small clumps.

9. Assemble the muffins. Scoop about 1/3 cup of batter into each prepared muffin well.

Sprinkle a small portion of the streusel mixture over each muffin.

10. Bake for 18-23 minutes, until golden brown and a skewer inserted comes out clean. Allow to cool in the pan for at least 10 minutes before transferring to a cooling rack.

Tips and tricks!

• For the best flavour, use a neutral oil such as canola, sunflower, or vegetable oil.

• The muffins are best the same day, and bringing refrigerated muffins to room temperature or toasting them in the oven can crisp up the streusel again.

Substitutions: The apples can be replaced with peeled and diced d’Anjou or Bartlett pears.

Variations: Make almond apple crumble muffins by substituting almond extract for the vanilla in the batter and adding 1/4 cup slivered or chopped almonds to the streusel. Crisp, tart apples such as Granny Smith or Braeburn are recommended for the original recipe.

Storage: Store in an airtight container in the fridge for up to 3 days. Bring to room temperature before serving or toast in the oven to crisp up the streusel again.
