These adorable strawberry shortcake bites make the perfect addition to your party table and even double as cute decor as well as mini party desserts! They are decked out with freeze dried strawberries for real strawberry flavour and make for such a beautiful party display.
Strawberry Shortcake Balls Servings: 18 to 22 balls

You will need
• 1 (15.25 oz) box strawberry cake mix (plus ingredients listed on the box)
• 8 oz cream cheese, softened
• 1 cup crushed Golden Oreos
• 10 oz white melting chocolate wafers
• ¼ cup crushed freeze-dried strawberries
To begin, prepare the strawberry cake mix according to the package instructions. Bake as directed, then let the cake cool completely at room temperature. Line a baking sheet with parchment paper and set aside.
Once the cake is fully cooled, crumble it into a large mixing bowl. Add the softened cream cheese.
Then mix together by hand (this is easiest) or with a sturdy spoon until fully combined and smooth.
Stir in ¾ cup of the crushed Golden Oreos.
Scoop and roll the mixture into 1–2 tablespoon-sized balls. Place them on the prepared baking sheet. Freeze the balls for 20 minutes to firm up.
Melt the white chocolate in a microwave-safe bowl in 30-second intervals, stirring between each, until smooth. Using a fork, dip one ball at a time into the melted chocolate, turning to fully coat. Let any excess chocolate drip off, then place back onto the parchment-lined sheet.
Working quickly (the chocolate sets very fast), sprinkle with the remaining crushed Golden Oreos and crushed freeze-dried strawberries.
Repeat with remaining balls.
Let sit at room temperature until the chocolate has fully hardened, about 10 minutes. Serve and enjoy!
Tips and tricks! • Don’t skip freezing before dipping. It helps the balls hold their shape.
• Make sure the cake is completely cooled before mixing. If you're short on time, you can let it cool at room temperature for 15 minutes, then place it in the freezer for 10–15 minutes to speed things up.
• Store in an airtight container in the refrigerator for up to 5 days.
• Freeze-dried strawberries soften quickly once they touch the chocolate (sometimes within 20 minutes). If you are not serving right away, add them just before serving. The crushed Golden Oreos will help them stick.
