Pecan Pie Brownies serves: 9
Prep time: 15 minutes
Cook time: 40 minutes
Total time: 1 hour, plus cooling time
You will need
• 1 16 oz box of brownie mix
• Ingredients called for on the brownie mix box, such as eggs, oil and water
• 1/2 cup of butter
• 1/2 cup of light brown sugar
• 1/4 cup of light corn syrup
• 2 tsp of cornstarch
• 1/2 tsp of ground cinnamon
• 1/4 tsp of salt
• 1 1/4 cup of pecans (cut in halves)
1. Prepare the brownies. Preheat the oven according to the directions on the brownie mix box. Prepare the brownie batter using the ingredients listed on the package, then spread it evenly into the recommended baking pan.
2. Bake the brownies according to the package directions, but begin preparing the pecan topping while they are in the oven.
Make the pecan pie topping. Add the butter, brown sugar, and corn syrup to a medium saucepan over medium heat. Cook, stirring frequently, until the butter has melted and the brown sugar is dissolved.
3. Stir in the cornstarch until completely combined. Allow the mixture to gently come to a boil, then remove it from the heat.
Stir in the salt, cinnamon, and pecans until the pecans are completely coated in the brown sugar mixture.
4. Once the brownies have finished their initial bake, remove them from the oven. Reduce the oven temperature to 325°F.
Spoon the pecan pie topping evenly over the brownies, spreading it all the way across the top.
5. Return the brownies to the oven and bake for an additional 15 minutes, or until the pecan topping is bubbling and beginning to set.
6. Allow the brownies to cool completely before slicing so the pecan topping has time to firm up. Cut into 9 large brownies or smaller squares and serve.
Tips and tricks!
• Let the brownies cool completely before cutting, as they’ll be much easier to slice once the pecan layer has set.
• For extra clean slices, use a sharp knife and wipe it clean between each cut.
• The brownie mix should be prepared using the ingredients called for on the package, such as eggs, oil and water.
Variations: You can use pecan halves, pecan pieces, or roughly chopped pecans, depending on the look and texture you prefer.
Storage: Store leftover brownies in an airtight container at room temperature for up to 5 days or in the refrigerator for up to 7 days.
