Brown Butter Candied Sweet Potatoes serves: 6–8

You will need
• 3½–4 lbs sweet potatoes
• 1 tsp salt
• ½ cup unsalted butter
• ¼ cup maple syrup
• ¾ cup light brown sugar
• 1 tbsp water
• 1 tsp cinnamon
• ½ tsp nutmeg
• ½ tsp allspice
• ½ tsp ginger
1. Preheat the oven to 400°F (200°C) and grease a large baking dish. Peel and slice the sweet potatoes into ½-inch pieces
Then toss with the salt.
2. Brown the butter in a saucepan over medium heat until nutty.
Stir in the maple syrup, brown sugar, water, and spices.
Bring to a boil and cook for 90 seconds.
3. Pour the glaze over the sweet potatoes
Then toss to coat evenly.
4. Bake uncovered for 45–60 minutes, stirring every 15 minutes, until fork tender and glazed.
5. Let cool for 5 minutes, stir once more, and serve warm.
Tips and tricks!
• Use a large baking dish for the stickiest glaze.
• Yellow or orange sweet potatoes both work well.
• Store leftovers covered in the refrigerator for up to 4 days and reheat before serving.
