This recipe makes: 24 pumpkin bites
Prep time: 20 minutes
Chill time: 1 hour
Make ahead: Mix and roll the cheese balls a day ahead, store them without coating, then roll in crackers and garnish just before serving.
You will need
• 8 ounces chive and onion and onion cream cheese, softened
• 1½ cups shredded cheddar cheese
• ¾ teaspoon paprika
• ¼ teaspoon garlic powder
• ¼ teaspoon black pepper
• 1 cup finely crushed cheese crackers
• 12 pretzel sticks
• Flat-leaf parsley
In a mixing bowl combine the cream cheese, cheddar cheese, paprika, garlic powder, salt, and pepper.
Use an electric hand mixer whip until well combined and smooth. Refrigerate for 15 minutes.
Roll the cream cheese mixture into 1-inch balls and place them onto a parchment paper lined baking sheet.
Place your cheese cracker crumbs in a shallow pie plate.
Roll each ball in the crushed crackers and set back on the tray.
Use a toothpick to make 4 stripes around the sides of each cheese ball. Press the top of the cheese ball down just slightly. Repeat with all the cheeseballs.
Cover the cheese balls and refrigerate 45 minutes to an hour or until ready to serve.
Right before serving place one half of each pretzel stick in the top of each pumpkin and decorate with one left of parsley. Serve!
Different ingredients you can try!
Cream Cheese: Use Neufchâtel cheese for a lighter option, or try different flavored cream cheese (like garden veggie) for a twist.
Cheddar Cheese: Sub in pepper jack, Colby, or smoked gouda for a different flavor.
Spices: Add a dash of cayenne or chipotle powder for some kick, or use ranch seasoning for kid-friendly flavor.
Cheese Crackers: Goldfish, Cheez-Its, or any cheese-flavored cracker works. You can also use panko or crushed Ritz for a buttery coating.
Variations Sweet & Savory: Mix in a little honey or cranberries for a sweet-savory bite.
Bacon Lovers: Stir in crumbled bacon bits or chopped ham into the cheese mixture.
Mini Jalapeño Popper Balls: Add finely diced jalapeño and a touch of cumin.
Pumpkin Spice Theme: Want a fun twist? Add a small amount of canned pumpkin and swap cheddar for creamier cheese, like goat or brie.
Tips & Tricks! Soften cream cheese fully before mixing to avoid lumps. Use gloves or lightly oiled hands to shape balls neatly and prevent sticking. Chill before rolling in crumbs so the mixture firms up and holds shape better.
Store cheese balls in an airtight container in the fridge for up to 3–4 days. Add pretzel "stems" just before serving to avoid sogginess. Be sure not to freeze, as they can become watery or grainy after thawing.
