Flaky golden puff pastry is filled with tender cinnamon apples and gooey caramel before being baked until crisp and finished with an extra drizzle of caramel sauce.

You will need
• 3 sheets puff pastry
• 2 apples, finely chopped
• 1/3 cup brown sugar
• 1/2 cup caramel sauce
• 1 tbsp lemon juice
• 1 tbsp ground cinnamon
• 1 egg, beaten
1. Preheat the oven to 375°F (190°C) and line a baking tray with parchment paper.
2. In a medium saucepan, combine the chopped apples, brown sugar, cinnamon, and lemon juice. Cook over medium heat for about 10 minutes until the apples soften and most of the liquid has evaporated. Remove from the heat and allow the mixture to cool slightly.
3. Cut the puff pastry into circles.
Spoon about 1 tablespoon of the cooled apple filling onto one side of each circle, then drizzle over a little caramel sauce.
4. Fold the pastry over to form crescents and press the edges firmly with a fork to seal.
Arrange on the prepared baking tray, brush with beaten egg, and sprinkle with a little extra sugar if desired.
5. Bake for 25–30 minutes until golden brown.
Allow the empanadas to cool for a few minutes before drizzling with extra caramel sauce and serving warm.
