How to make French Onion Soup Stuffed Mushrooms

French Onion Soup Stuffed Mushrooms are the perfect bite-sized appetizer for holidays, dinner parties, or cozy gatherings. Tender mushrooms are filled with rich caramelized onions, topped with melted Gruyère cheese, and baked until golden for all the comforting flavors of classic French onion soup in every bite.

You will need

• 1 lb (450g) medium button or cremini mushrooms (12–16)

• 2 medium sweet yellow onions, sliced

• 2 tbsp unsalted butter

• 1/2 cup broth

• 1/2 tsp garlic powder

• 1/2 tsp dried thyme

• 1/2 tsp ground black pepper

• 1/2 cup grated Gruyère or Swiss cheese

• Fresh parsley or thyme, for garnish


1. Slice the onions into thin quarter circles. 


Melt the butter in a large frying pan over medium heat. Add the onions and cook, stirring frequently, for 7–9 minutes until they begin to brown.


2. Reduce the heat to medium-low. 


Add the broth, garlic powder, thyme, and black pepper. Stir well, scraping up any browned bits, and cook for 12–15 minutes until the onions are soft, caramelized, and the liquid has reduced. 


Season with salt if needed.


3. While the onions cook, wash and dry the mushrooms. Remove the stems and hollow out the centers. Preheat the oven to 400°F (200°C) and line a baking tray with parchment paper.


4. Arrange the mushrooms cavity-side up. Fill each mushroom with the onion mixture.


Then top with a small mound of grated Gruyère or Swiss cheese.


5. Bake for 10–15 minutes until the mushrooms are tender and the cheese is melted and browned in spots. 


Garnish with fresh parsley or thyme and serve hot.


Tips and tricks!

• Choose medium to large mushrooms with thick stems to leave more room for the filling.


• Prepare the caramelized onions up to 2 days ahead and store them in the refrigerator.


• Clean and prepare the mushrooms up to 1 day ahead. Store them in an airtight container lined with a paper towel to absorb moisture.


• Gruyère gives the most authentic French onion soup flavor, but Swiss cheese is a delicious alternative.
