This Chinese Chicken Pasta Salad is the perfect mix of crunchy, creamy, and savory with a fresh twist. Tender shredded chicken, crisp snow peas, crunchy water chestnuts, and colorful veggies are tossed with rotini pasta and coated in a creamy sesame soy dressing that’s packed with flavour.
The chow mein noodles add the perfect crunch while the napa cabbage keeps everything light and refreshing. It’s a great make ahead dish for summer parties of every kind, cookouts, lunches - and even meal prep, or easy summer dinners!

You will need
• 2 cups of cooked shredded chicken
• 1 cup of fresh snow peas
• 1/2 cup of shredded carrots
• 1/2 cup of diced red bell pepper
• 4 cups of cooked and cooled rotini
• 1 1/2 cups of chopped napa cabbage
• 8 oz can of sliced water chestnuts (drained)
• 1 cup of chow mein noodles
• 1/4 cup of chopped scallions
• 1/4 cup of soy sauce
• 1/4 cup of mayonnaise
• 2/3 cup of plain yogurt
• 1 tsp of ground ginger
• 1 tsp of pepper
• 2 tbsp of sesame seeds
1. To a large bowl add the cooked chicken, snow peas, carrots, bell peppers, cooked and cooled rotini, napa cabbage, water chestnuts, chow mein noodles and scallions. Toss gently until mixed together.
Make sure the pasta is fully cooled before mixing so the dressing stays creamy and the salad keeps its fresh texture.
2. To a medium size bowl add the soy sauce, mayonnaise, yogurt, ground ginger and pepper.
Stir to combine until the dressing is smooth.
Add the dressing to the large bowl
Then toss again until everything is evenly coated. Sprinkle with sesame seeds.
3. Place the salad in the refrigerator for 30 minutes to let the flavors meld together before serving.
4. Serve chilled and enjoy. For the best texture, add a little extra chow mein noodle crunch just before serving if desired.
Tips and tricks! • Store in an airtight container in the fridge for 2-3 days.
• Instead of cooking chicken, rotisserie chicken works great for this recipe and makes preparation even quicker.
• Make sure the pasta is fully cooled before adding the dressing so it stays creamy.
