Slow Cooker Pumpkin Cinnamon Roll Casserole serves: 8–10

You will need
• 2 (12.4 oz) cans refrigerated cinnamon rolls (icing reserved)
• 1 (15 oz) can pumpkin puree
• 3 eggs
• 1/2 cup heavy cream
• 1/2 cup brown sugar
• 1 tsp vanilla extract
• 2 tsp pumpkin pie spice
• 4 oz cream cheese, softened
• Reserved cinnamon roll icing
• 2 tbsp chopped pecans (optional)
1. Whisk together the pumpkin puree, eggs, heavy cream, brown sugar, vanilla extract, and pumpkin pie spice until smooth.
2. Lightly spray a 6-quart slow cooker with nonstick cooking spray. Open the cinnamon rolls, reserve the icing, cut each roll into quarters, and place the pieces into the slow cooker.
Pour the pumpkin spice mixture over the cinnamon roll pieces and gently toss to coat evenly.
3. Cover and cook on LOW for 2–3 hours, or until the center is set and the cinnamon rolls are cooked through.
4. About 15 minutes before serving, microwave the softened cream cheese until easily stirrable, then mix with the reserved cinnamon roll icing until smooth.
5. Drizzle the icing over the warm casserole
Sprinkle with chopped pecans if using, and serve warm.
